I love Blue! I will say the locations is Dallas seem more careful but I haven't had a problem at this location and I've been twice. I get the rainbow roll and the Sake roll. I haven't had an issue so far. They bring GF soy sauce and bring my food out separately from everyone else's and say GF when they drop it off.

I don't think they place much importance on dietary restrictions, though they do offer a gluten sensitive menu. The food I did order was mediocre and way overpriced for the amount I received. I ordered the Truffle Salmon sashimi - five small SLIVERS of salmon for $15+ is outrageous. There are plenty of sushi places to choose from, I'd pass on this one.
As far as safety, i had called ahead to request to be seated with a server that understood about gluten free and was actually moved, after being seated, because the person that seated us was unaware. I still had a very low confidence level with that server, as far as being knowledgeable. She was very nice, but I was surprised that she was the best they had, concerning my request for a knowledgeable server.

GF menu and GF soy sauce available. The food quality is excellent, and I did not feel limited at all on menu options. I would recommend talking to the manager or asking for a server who is familiar with gluten allergies. Our server did not seem to have any knowledge of the gluten free vs. regular food items, so I would make sure you know the difference and ask that the server write “no wontons” or “use GF soy sauce” next to your items when you order.

Waitress was SUPER discussed seriousness of contact and made sure to even note GF soy sauce for hubby's fried rice for just in case!
After discussing my gluten allergy with the server, I was served a salad with fried wonton strips covering the top. Then when I sent the salad back I was brought sashimi with a sauce made with soy sauce on it. Clearly they need better trained by for their servers and kitchen staff. I could not be more disappointed!

There is a gluten free menu, and I’ve eaten here a few times. I feel fine afterwards.
I stay with the simpler items: nigiri and sushi rolls. So mostly just rice and fish.

GF soy sauce, knowledgeable servers who can mark the gluten “allergy” for the kitchen - they change gloves and clean utensils / boards.
