Not the best experience here, unfortunately...
Technically, the only hot pot base that is gluten free is hot water - according to their manager. Which was not what the server told me, so I was served their mushroom soup as a base and promised it was GF. I was explicitly clear it was an allergy, too.
They have sashimi, nigiri and a few rolls that would be safe. But since it's AYCE, you're not getting a great bang for your buck when you can't safely take advantage of the hot pot. If you're celiac, I'd steer clear.
