All of their sauces are gf (according to their website) and take extra precautions, like switching gloves and wiping cooking surface/using tin foil, for corn tortilla if you say it is for an allergen. I haven't gotten sick here and feel very comfortable.

I have been to costa Vida multiple times and multiple locations and have never gotten sick. You just have to ask for gluten free before you order. 10/10 would recommend!

From their allergen list: We have worked diligently to remove wheat gluten from all our sauces, dressings, and proteins. Natural glutens remain only in our flour and wheat tortillas and in two desserts--tres leches and key lime pie. This means that we offer "oceans of gluten-free options" in our menu. All of these items are gluten-free: all enchiladas, all tacos, all salads (without the flour or wheat tortilla), all nachos, and our chicken tortilla so up...which uses corn strips.
Every time I go there they ask if my order is due to preference or allergy and take extra precaution.

they're very respectful of gluten free and celiac people, as long as you make it clear you'd like it gluten free. they gave me no trouble at all and I've never had any bad reactions to their food
Costa Vida is awesome!!! Seems like the entire restaurant is focused around Gluten Free. I eat here at least once a week. I’ve never been sick. Staff is knowledgeable about gluten. They are helpful & friendly. Best place for Celiacs.

They use the same tortilla press for their corn and wheat tortillas. No way that doesn’t have cross contamination and changing spoons in the same prep stuff that is already cross contimsted doesn’t work.

My daughter and I have never gotten sick eating here. They are really good about cross-contamination (although they’ll only say gluten-friendly) and the only thing on the menu that’s got gluten is the flour tortillas and a couple of the desserts. They will make any of the menu items out of the corn tortillas or omit tortillas altogether for salads. The staff is super helpful and considerate.
Not all the workers seem know about the gf protocols but when they do, they are very good at following them; changing their gloves, getting certain foods from the original containers etc.

I had a sweet pork salad. The person that helped me wasn’t sure about my questions but the shift manager helped out. Gloves changed, one person took my order through the whole line. Fryer is GF and tortilla strips are safe.
Only thing in the restaurant with gluten are the flour tortillas. Watch your food and it looks at least as safe as Chipotle…honestly maybe a bit safer because they use utensils for lettuce and cheese where other places use gloves.
