Ate at Capitol Burger 2 days in a row since I was staying at the attached hotel. They have a few things that are GF. I opted for the cheeseburger with deviled eggs as an appetizer. The eggs were a bit sweeter than I like but included a big piece of candied bacon shoved in the top. The burger was small for the price though the GF bun was a variety that I was not accustomed to. I would guess they use canyon bakehouse buns but I could not get anybody to confirm. The fries are not safe and they do not offer potato chips. I could have requested corn chips but that is against my burger religion. Pricing was high and portions suffered from shrinkflation. Reasonably safe if you take your time and ask the right questions.

Explained need for gluten free, and waitress double checked everything with manager and kitchen. The truffle fries were the main feature here and are gluten free. HIGHLY recommend. The salad dressings they couldn't guarantee gf, so did oil and vinegar. The burger was good and had a pretty good quality gf bun.

All of our burgers, grilled chicken sandwich and vegetarian burger can be served with a gluten-free bun.
