So so yummy, I got the cauliflower bowl and it was very good. Almost everything is GF, the staff is knowledgeable about it all. Separate fryer and grill for gluten-containing items, so I felt safe. Menu has items with gluten marked.
I contacted them before going to see how they handle GF orders and cross-contamination. Here’s the response:

While our menu is almost entirely gluten-free, you can check out all nutritional/allergy information for specific items at bartaco.com/nutrition. To handle allergies, we follow standard protocols of changing gloves, washing hands, changing tongs, and wiping counters and trays before assembling tacos and not tacos when we are preparing allergy tickets.
When you visit, we suggest you make a team member aware of your allergy prior to your meal as well so they can best assist your requirements and ensure your safety.
