I'm very sensitive to cross contamination and eating out at a restaurant that's not totally gluten free is always a risk for me. But as it's been several weeks since I ate there I can confirm I did not get sick. Staff was very knowledgeable. They told me over the phone and at the table that the fryer was not safe. They brought over a complimentary dish and specifically said it was gluten free.
